Turkey Day staging..Gobble..Gobble..This is a favorite recipe that has been on many fancy  buffets and originally was credited to Mamie Eisenhower..The coconut is limited to the top of the cream piping adorning the pie & therefore is not a central component..The Pumpkin flavor is much more pronounced & dominant and as Turkey Day is right around the corner this is a nice compliment to the more traditional fare of Thanksgiving foods..

Pumpkin Coconut Chiffon Pie

2/3 cup organic sugar

1Tbsp. unflavored gelatine

1/2 tsp. sea salt

1tsp. cinnamon

3 yolks

3/4 cup milk

1 cup pumpkin

3 whites

1/3 cup organic sugar

1- 9″ graham crust

1 cup whipping cream

1/3 cup coconut, toasted @ 350 degrees for 4-5 mins..

Mix first 4 ingredients; stir in yolks and milk..Cook & stir over low heat till mixture thickens slightly..Stir in pumpkin.Chill till it mounds slightly when spooned..Beat egg whites to soft peaks..Gradually add 1/3 cup sugar, beating to medium peaks; fold in pumpkin with a figure 8 motion..Pile in chilled crust..Chill firm-approx. 1 hour..Whip whipping cream to stiff peaks & then pipe over; lightly cover with toasted coconut…

Victoria Butter Cookies

VictoriaChristmas15Victoria Butter Cookies is a recipe I received from Master Pastry Chef Walter Rhea while at Sullivan College in 1990..I have used it extensively on dessert buffets & on petit four displays at various hotels such as Hyatt Regency and Hilton Easton and a few Country Clubs..They are very light and flaky & dipping them in ganache  & rolling them in toasted almonds gives them a little dazzle..A perfect Christmas cookie for your Families celebration…

Victoria Butter Cookies

  • 10.5 ounces butter (room temp)
  • 4.5 ounces organic sugar
  • 3 ounces evaporated milk
  • 12 ounces unbleached all purpose flour
  • pinch of salt
  • 1/2 tsp. vanilla
  1.  Pre heat oven to 350
  2. .Cream butter & sugar on med. speed till light & fluffy
  3. Combine milk & vanilla slowly to creamed mixture
  4. Sift twice flour & salt
  5. Add 1/4 of dry, wait 30 seconds & then repeat, when thoroughly combined stop
  6. Fold top of pastry bag down & add a small amount of batter
  7. Bag out with pastry bag and star tube in the shape of a question mark
  8. Bake 7-8 min  @ 350 degrees till edges lightly brown, do not over bake..
  9. cool 15 minutes & then dip bottom edge in ganache & cover with toasted crushed almonds

Holiday Cheer

I will be posting as many blogs as I can to give everyone some great ideas for the Holidays, especially Christmas..If you would prefer Heaven Scent make everything dessert wise for you just give me a call..The recipes will be fairly easy to make..Hope to finish Victoria Butter Cookies blog tomorrow..They will be piped, baked, dipped in ganache & coated with toasted almonds…I will soon be offering pure vanilla extract from Haiti within a few days for your Holiday baking at a special price through December..I may (time permitting) add some cooking videos too..Stay tuned..Never a dull moment..
